Toss-Together Ratatouille

I arrive home after 8pm, and want a healthy and delicious dinner. What do I do? I don't order out - too expensive, too fattening and takes too long!
Instead I peruse my fridge for ingredients: half an eggplant, a red pepper, half a spanish onion, a handful of mushrooms, and some cooked boned chicken breast portions in the freezer from last weekend's marathon chicken session.
Hmm..
Sounds like its time to cook some rice, heat the chicken, a make a quick "toss-together ratatouille" with the veggies.
Its really quite simple: I just chop all the veg, pour a little olive oil into a large skillet, saute the onion with a clove of garlic (and maybe a few "leaves" of rosemary from our countertop plant!). Then add the other veggies, a splash of white wine (or lemon juice or balsamic vinegar - whatever you have on hand!). Cover and let simmer til all the veggies are cooked thru.
It smells heavenly in my kitchen right now - wish you could join us!
