Scallops!

We love seafood, and so we regularly eat fish or shellfish several times a week. One quick favorite is sauteed scallops over dirty rice. This evening, in honor of my "2 days off", I cheated and purchased the dirty rice :)

This is a simple and tasty dinner that is a welcome addition to a healthy lifestyle. We serve it with a salad, or a steamed green veg (tonight: steamed broccoli with lemon and garlic)

Sauteed scallops

1-2 lbs sea scallops (bay can be used as well)
1 tbs olive oil
3 cloves garlic, smashed
1 bell pepper, diced
1 jalapeno pepper, minced
1-2 tomatoes, diced OR a handful of cherry/grape tomatoes
Freshly ground black pepper

Saute all ingredients EXCEPT scallops until they are tender and have released their flavors. Add the scallops and saute on medium to high heat until done. The scallops will release some water, if they have been frozen they will release a LOT of water - I usually drain some out as otherwise they poach rather than saute.

Serve this over dirty rice with a green salad and a crisp white wine and enjoy!
