Raspberry Cream Freezer Pie, Oh My!

On this hot 97+ summer day, I made a cool and refreshing treat for my sweetie: raspberry cream freezer pie. I used a purchased graham cracker crust that I had on hand, but making a graham cracker or cookie crust is easy-peasy. The filling? 1 pint of heavy cream, whipped til fluffy + 1 pint of crushed raspberries with all the juice + 2 packets stevia sweetener (sugar to taste will work as well). I stirred the raspberries and stevia into the whipped cream, and gently spooned this luscious pink filling into the prepared crust. Then pop it into the freezer!

When I serve this, I prefer to cut and plate the slices whilst frozen solid, then let them sit on the plates a few minutes to slightly soften.

A delicious seasonal treat!
