A delicious swiss chard recipe!

Using what's on hand, I made the following to rave results.

1 lb cooked pasta, a penne or rigatoni is best
1 medium bunch swiss chard, cleaned. Slice the stems and "shred" the leaves
I med zucchini
1-2 tomatoes, diced
Onion greens, diced
2 cloves garlic, minced
About 2 Tbs butter (I used butter cos I had it. I think ab 4 tbs olive oil would work much better!)
2 tsp hot pepper

Saute the garlic, oniion greens and hot pepper flakes in the butter or oil til the garlic is golden and the onion greens are limp. Add the chopped chard stems plus about 1/4 cup of water. Cover and simmer about 5 minutes. Add the chard leaves, zucchini and tomatoes. If needed add another splash of water (or white wine if you like that better). Cover and simmer til all is tender. Toss with the pasta and serve. You may wish to top this with either grated parmesan cheese or crumbled feta - either would work a treat!

Next time, I would definately use olive oil (I ran out, ergo the butter) - and I would increase the chard to a large bunch. I had never served chard this way to the DH, so I went easy on it - but this dish could use more. Mushrooms might also add a nice flavor. Hmmm....
