Cool and Refreshing Lemon Freezer Pie!

The thermometer hit 108 today, and so we turn to old-fashioned methods to stay cool. We use fans. We dress lightly. We try to avoid chores or hard walking in the noon-day sun. And we eat lighter items. Like this tart and delicious lemon pie!

Lemon Freezer Pie
1 prepared graham cracker (or other cookie) crust
1 can evaporated milk (I used fat free)
Approx 1/2 cup lemon juice, to taste
3-5 packets of stevia, to taste (you can also use sugar or another sweetener)

Whip the milk til light and fluffy. While continuing to whip, pour in the juice and sweetener. Take a small taste and adjust as needed, by adding more juice and/or sweetened. Gently pour into pie shell. Freeze til firm.

We will enjoy this tonight!
