Spicy Black Bean Soup Recipe

We purchase organic dried beans by the sack, 25 or 50lb at a time. This suits us because we strive for a "real foods" diet whilst also keeping an eye on our wallet :)

But what to do with all those beans? Well, we make a lot of chili - usually without meat but sometimes with. We have beans & rice, and rice & beans. We make bean salads. And we make hearty, healthy and soul-satisfying soups!

Spicy Black Bean Soup


1lb dried black beans, soaked 24 hours in water with 1tsp lemon juice
1 quart chicken stock
1 pint (or a large can) tomato puree
2 cloves garlic, minced
1 medium onion, diced
2 cups veg of choice (or whatever is on hand)
Dash of cayenne pepper

Method

After soaking,  simmer the beans in stock until soft, then add the rest of the ingredients and simmer all day to allow the flavors to develop.

This is my "go to" recipe when I want something easy to throw together in the morning - then the DH or the Boy can keep an eye on it while I am out. What is your favorite "go to" recipe for chilly dark days?
