Cold Veggie Chicken Rice Salad

I love experimenting with recipes...especially healthy, cool summer recipes. This dish came about when I had planned a pasta salad...and discovered too late that there was no pasta...





Ingredients

2 cups cooked, chilled rice

2 chicken breasts, cooked and diced

1 yellow pepper, diced

1 red pepper, diced

2-3 tomatoes, diced or 1 pint cherry tomatoes cut in half

1 small red or vidalia onion, diced

I small zucchini or summer squash, diced

A few leaves of basil, shredded

Vinaigrette dressing (I use 3 parts olive oil to 2 parts raw cider vinegar, with some peppercorns and minced herbs tossed in)



Mix all ingredients together in a large bowl. Cover and chill 30 minutes, to allow flavors to blend. I serve in soup bowls, with tall glasses of iced tea or lemonade. Enjoy!
