Apple Crumble Recipe

Apple crumble...sweet tart apples, crunchy topping...what else do you need in an apple dessert? Delicious plain and carefully spooned into small dishes, or warm with vanilla ice cream, or drizzled with cream...

Apple Crumble


  • 6 medium apples (I used Cortlands, but any apple with a nice balance of sweet to tart will do!)
  • 1 cup butter, chilled
  • 1 1/2 cups flour
  • 1 1/2 cups sugar (I used a mixture of 1/2 white and 1/2 brown sugars)
  • 2 tsp cinnamon (add more to taste)
  • 1 tsp allspice
  • 1 tsp cardamom

Peel and slice the apples into bite-sized pieces. Layer into a buttered 1 quart baking dish (or a 9 1/2 inch pie pan).

In a bowl, whisk together the flour, sugar and spices. Cut the chilled butter into small squares and drop into the bowl.  Cut the butter into the flour with two knives or a pastry blender until it resembles coarse breadcrumbs. This is the topping.

Gently spoon the topping over the apples, occasionally shaking or tapping the pan so that the crumbs "settle" in around the apples.


Bake at 350F for 45-55 minutes, until the apples are tender when poked. If you use a pie pan, like I did, put it on a lined cookie sheet in case the juices overflow a bit. Allow to cool for at least 15 minutes before serving - the juices will be very hot!
