My recipe is tweaked to my sweetie's taste, but based on inspiration from a few sources on the web, including Pioneer Woman and Ina Garten. I hope you enjoy it!
NOTE: I used frozen puff pastry - the more adventurous can make their own using recipes like this one from the Sophisticated Gourmet.
Puff Pastry Apple Tart
3 medium-sized baking/pie apples(I used Cortlands)
1 Tbs cold butter, cut into very tiny cubes
3/4 cup demerara sugar (brown sugar can be substituted. The texture and taste will be slightly different, but still very yummy!)
1 tsp cinnamon
1/2 tsp cardamom
1/2 tsp allspice
1 tsp lemon juice
1 sheet of prepared puff pastry, defrosted
Method:
Preheat oven to 350F.
Unfold the defrosted puff pastry sheet and carefully cut into 2 pieces. Lay these pieces onto a large sheet pf parchment on your cookie sheet (so it will not stick to your cookie sheet). Make sure you use a cookie sheet with sides (also known as a jelly roll pan) so that the inevitable juices from the apple and sugar do not make a mess of your oven! As you can see from my photo, I used 2 pieces of parchment...and the juices ran underneath and made a sticky mess of my cookie sheet ... ah well - nothing a soak in hot, soapy water can't handle!
Peel, core and slice the apples very thinly. Toss in a large bowl with a tsp of lemon juice to avoid browning. Add the sugar and spices and gently toss so all the slices are coated. Let this sit for 10 minutes.
Place the sugared apple slices onto the puff pastry in pretty rows. Sprinkle with a touch more of spice if you like. Place cookie sheet in the oven and bake about 20 minutes, until the pastry is golden and the apples are soft. Keep an eye on it towards the end, because it can burn quickly!
Remove from the oven and immediately put the tarts onto a serving plate. Cool slightly, cut into 2" slices, serve - and enjoy!
