I had read recipes for fritters and donuts and mourned my lack of a deep fryer...until this week! After being spurred on by an eager 8 year old, I realised that I could indeed fry fritters in a small saucepan using less than 2 cups of oil!
The secret, of course, is a small diameter saucepan with a heavy bottom - and a recipe that allows for small portions to be fried at once. These easy apple fritters fit the bill perfectly - we dropped 2 1-Tablespoon portions into the hot fat at a time, flipped them with chopsticks, and savored the real old-timey goodness of our creations!
Apple Fritters
- 1 1/2 cups apple in small dice (so they will cook in the short frying time)
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/4 cup sugar
- 2 tsp cinnamon
- 1/2 cup milk
- 1 beaten egg
- 1/2 cup cinnamon sugar
Method:
Heat your oil or fat to 375.
Put the dry ingredients in a mixing bowl, and stir to distribute the baking powder. Add the milk and beaten egg, stir to blend. Stir in the apples, coating them well in the batter. The batter will be a bit runny - I sometimes add another tablespoon or so of flour if I am making this with children, as it makes for fewer drips on the side of the stove-top.
Carefully drop heaping tablespoons of batter into the fat - each spoonful is one fritter. Space them just far enough apart that they do not cook into each other. Flip over after about 1 minute (they should be nicely browned on that side) - and cook for about another 1 to 1 1/2 minutes. You can drop larger fritters if you have a larger fryer, just be sure to cook them a bit longer!
