Salted Caramel Sauce Recipe

This is an easy and delicious sauce - wonderful for drizzling over ice cream or sliced apples or pumpkin blondies or..... anything you can imagine! Or stir a teaspoon into coffee or hot cocoa for a treat!



Salted Caramel Sauce Recipe  (yield approx 1 1/2 cups sauce)

1 cup sugar
1/4 cup water
1 Tbs organic corn syrup
1/2 cup heavy cream
1 Tbs vanilla extract
2 Tbs butter
1 Tbs good sea salt

Method:

Bring the water to boil on medium heat in a large, heavy-bottomed saucepan or skillet. Add the sugar and corn syrup and stir or whisk only until the sugar is dissolved. Boil the sugar syrup until it is amber colored - swirling the pan from time to time if it looks like it is cooking unevenly. WATCH IT CAREFULLY, because once it starts turning amber colored it can burn quickly.

Turn off the heat, pour in the cream, vanilla and butter and start immediately stirring - it might feel a bit "seized up" at first but it will blend. Add the sea salt. Return the pan to medium heat and boil the mixture 1 minute while stirring continuously. Allow the mixture to cool a bit and then carefully pour it into a sterile jar. Allow to cool completely before covering.

This will keep well for months in the refrigerator - if you can resist it for that long!
