Late Spring Spearmint Harvest

My spearmint is growing like mad - the stalks are over 2 feet tall - I guess they really liked the feeding of composted manure I gave all of my containers before winter!



While I am very glad the mint is so very happy, I have to be careful to harvest before it blossoms. So this morning, before setting off the office, I clipped down several stalks by half. The remaining stalks will continue to grow (but will not blossom so quickly) and the cuttings are drying for tea. My craft room smells heavenly!

I use the spearmint in both dried and fresh forms to make refreshing drinks... hot mint tea, cool "mint water" (float a few leaves in a mason jar of cold water), added to regular iced tea, and more! I also like to infuse the mint into milk to make a spectacular homemade mint sorbet.
