We participate in a bi-weekly organic veg/fruit share - so every 2 weeks I get a box of delicious, healthy foods...but sometimes I am not sure WHAT to do with some of the items :)
This week, we received:
2 green leaf lettuces (we're giving these to my parents, as ou garden supplies more than enough lettuce!)
2 slicing tomatoes
A bunch of basil (some with the tomatoes, then pesto!)
2 bunches collards (rinse, chop, and right into the pot with water, touch of vinegar, generous dash hot sauce, salt and pepper)
Carrot with greens (carrots to parents because we still have a lot from last time, greens into a jar of water until I make soup tomorrow)
About 1.5 pints each cherries and blueberries (share some, snack on the rest! They won't last the weekend)
7 small summer squash (3 to mom and dad, keep 4 for us to slice, sautee and serve with a dab of pastured butter and some freshly ground pepper)
3 kohlrabi (I'll keep them. No clue how I will prepare, never prepped before - will probably sautee the edible greens and read recipes for the root, which is supposed to be tender and delicious when well peeled)
Imported organic bananas (share with mom and dad - too many for us at once! I may peel and freeze a few for baking or smoothies later)
3 green bell peppers (for us, mostly in salads or sliced for snacking)
Sometimes, I am not really certain WHAT we have. In general, we eat mystery greens either as salads or sauteed. (Or tossed into a "mess of greens", simmered as the collards above). I take a nibble before deciding. I have yet to come across a mystery root vegetable, but we often roast them with garlic and olive oil and herbs. Our problem is usually related to quantity, not "what do I do with this"...and I am trying to resolve quantity issues by sharing...altho my parents aren't as adventurous veg-wise as I am. So I let them have the familiar salad greens that would wilt before M and I could finish them :)
